The traditional dish from Eritrea, called “ጥብሲ” (Tibs) is a popular meat dish often made with beef, lamb or chicken. It’s typically stir-fried with onions, garlic, tomatoes and spiced with berbere, a blend of chili powder, fenugreek, and other spices unique to Eritrean and Ethiopian cuisines. Tibs can vary in spice level and often includes vegetables or clarified butter. It’s usually served with injera, a spongy flatbread which is used to scoop up the food instead of utensils, making it a communal and hands-on dining experience.
